- 1 pound Italian sausage
- onions
- garlic
- white cannellini -- soaked overnight or canned
- 2 cans (14-1/2 ounces each) diced tomatoes
- 1 teaspoon dried basil / oregano / Italian seasoning
- Spinach and / or other vegetables as you have or want
- serve with Parmesan cheese
